Summers are so special for many reasons one of it being ice cream and popsicles!
Summer has just begun in London, and Ice creams and Popsicles are reigning in my kitchen! I made these Blackberry Rose Vegan Popsicles since I have had too much of strawberries and raspberries for the season and wanted to try blackberries in a dessert. Tartness from blackberries together with a subtle sweet aroma of rose was truly an experience that I highly recommend. I am so happy I tried this combination and couldn’t wait to share it with you all!
I made these using Coconut Cream and Coconut milk which makes them dairy free but ended up pouring some regular chocolate syrup over these. π You could certainly avoid the chocolate syrup as they tasted amazing without the syrup too or you could add dairy free chocolate syrup if you are a chocolate fanatic like myself and are used to adding chocolate to everything. :p
Desserts for Breakfast, Anyone?
If you a dessert enthusiast and you crave for all things sweet right from when you wake up, just like I do, these healthy popsicles are for you! I love fruit smoothies, and smoothies are a part of my morning ritual, however, some days, especially during summers, I would prefer having an ice cream or popsicle and that is when these healthy alternatives come to my rescue. I love having one of these for breakfast. I look forward to mornings like these when after a quick cup of hot coffee or tea, I can stick one of this delicious yet healthy popsicle in my mouth and take my dog out for a walk simultaneously.Β No cooking, cleaning or washing up required and I would save myself some time. Isn’t that fun?
How to make the perfect popsicles?
Firstly, I must say I only prefer the classic looking popsicles. They come out so perfect, and I believe they look more inviting than any other shapes. Although, I might just fall for another type if they come with a CHANEL logo. π Anyhow, it was so difficult to find the classic popsicle moulds in the UK that I had to order one from Amazon (US). So if any of you manufacturers are reading this, we, in the UK are in desperate need of good quality popsicle moulds in various designs and shapes!!!
The best thing about these moulds is they come with a lid which has grooves to insert your wooden sticks once you pour the liquid into your mould. These work perfectly well as there are no plastic attachments that you need to worry about misplacing when you have guests over or when you want to stick one in your mouth while you are leaving home. The other reason is they look so good on a stick when photographed rather than with a plastic attachment. I mean it could work if the popsicles are made for kids, but as much as I love popsicles, I don’t want to look 10 when I am having one you know. π This is serious grown up stuff! :p

In addition to the moulds, the texture of the popsicles matters so much to me. There are times when I am craving juicy, water based ice lollies, and then there are times when I need healthy breakfast alternatives. I made these Blackberry Rose Vegan popsicles using a just 4 prominent ingredients and they turnd out to be super creamy and delicious. Having said that, since I used raw berries, there were ice crystals formed due to water content, which did not bother me as much but I thought I should let you all know.
Here’s the easy peasy recipe for Blackberry Rose Vegan Popsicles!
- 1 x Can of Coconut cream (160 ml)
- 1 x Cup coconut milk
- 300 Grams of blackberries
- 2-3 Tablespoon Agave Nectar (or adjust according to your taste)
- 3-4 Drops of Rose Extract
- Add coconut cream in a mixing bowl and beat until it is light and fluffy.
- Add blackberries, rose extract, coconut milk and agave nectar in a blender and blend until it is smooth.
- Add this mixture to the coconut cream and mix well with a spatula. Transfer the liquid into popsicle moulds and freeze for at leat 5-6 hours or overnight.
- Remove the mould from freezer 5-10 minutes before serving.
